Vanilla Pecan Sundae with Infused Blueberry Coulis Recipe
A selection of our products
For the coulis:
- 2 cups of frozen blueberries
- ¼ cup of spring water
- ½ lemon, juiced
- 0.3g of Endoca 99% Pure CBD Crystals
For the sundae:
- 3 scoops of non-dairy vanilla ice-cream
- ½ cup of pecan, chopped
- 1 slice of vegan chocolate brownie, or your favorite vegan cake or biscuit, crumbled
- Vegan coconut Chantilly—optional—or any non-dairy Chantilly of your choice
- Fresh fruit, we used blueberries but you can use any fruits of your choice
Add the blueberries, lemon juice and water to a medium-size saucepan on medium heat, then bring to a simmer for a couple of minutes. when blueberries start to soften and break down, reduce the heat to low and allow to simmer for an additional 8 minutes, checking regularly so the mixture doesn’t burn. Add the CBD crystals, mixing with a wooden spoon to dissolve and then simmer for one more minute. Set aside to cool down. Best served while still warm, but can always be reheated on the stove on low for 1 or 2 minutes.
—This coulis will store for up to 5 days in an airtight container kept in the fridge.
Constructing the Sundae
Add the warm coulis to a glass, then add 1 scoop of ice-cream, a few pecans, and some brownie pieces. Repeat with the remaining ingredients, leaving room for the Chantilly to be placed on top with more coulis, fruit, and leftover nuts.
