Beet Chips with Infused Pea Hummus Recipe
A selection of our products
For the beetroot chips:
- 5 raw beetroots
- 1/4 cup of olive oil
- salt and pepper to taste
For the CBD pea hummus:
- 1 1/2 cups of cooked chickpeas, freshly cooked or from a can, rinsed and drained
- 3/4 cup of green peas, defrosted, rinsed and drained
- 1 tbsp of tahini
- 1 large lemon, juice
- 2 cloves of garlic, chopped
- 1/4 cup of olive oil
- ½ cup of wheatgrass powder, optional
- 8 tbsp spring water
- Salt and pepper to taste
- 16 drops of Endoca 300mg heated CBD oil
Beginning with the beet chips, peel and wash the raw beetroots, then pat them dry with paper towel to remove excess moisture. Once dry, thinly slice them using a mandoline (slicer attachment) or slice into 2-3 mm rounds with a sharp knife.
Place the beetroot into a bowl and then coat with the oil and salt and pepper to taste. Mix well, and then place flat onto a non-stick oven tray—you may find you need more than one tray to fit all of the slices on. Bake for 40-50 mins (or longer if needed) at 350 degrees F in a fan-forced oven, flipping the beetroot slices at about the halfway mark—20-25 mins into baking—in order to ensure your beetroot slices crisp up nicely.
—Make sure you keep a close eye on them so that they don't burn.
Once they’re cooked, allow to cool, and will be fine to store in an airtight container for about 2 days—if they’re not eaten beforehand.
And the Hummus
Using a food processor, mix all the ingredients—except the olive oil and CBD oil—for 2 minutes, pausing every now and then to scrape the side of the bowl for an even consistency. Once you have achieved this, mix again adding the olive oil first while the mixer is still on in order to obtain that desirable creamy texture.
Once this has been achieved, add the CBD oil and pulse for a few seconds to combine. Serve alongside the beetroot chips you prepared earlier for a lush take on an old favorite.
—This hummus can be stored in the fridge for 3-5 days in an airtight container.
